Very dry dried herbs, such as oregano and basil |

Very dry, hard seeds such as coriander and anise |
Only very dry herbs and seeds should be used in this mill, as excessive moisture from water or oils can tend to clog the mechanism over time
Not recommended for PEUGEOT spice mills

fresh or moist herbs - they can clog the mechanism over time |

fresh, semi dry, oily, or wet seeds - they can clog the mechanism over time |

salt of any kind (wet or dry) - dry salt is too hard for ceramic mechanisms and will cause wear; wet salt is too corrosive for the internal mill shaft and the metal retaining bar |

peppercorns (dry, soft or wet) - soft or wet peppercorns can clog the mechanism over time; the PEUGEOT pepper mechanism produces the best possible results with dry peppercorns |
