The PEUGEOT pepper mechanism is intended to be used with whole peppercorns - the dried berries from the piper nigrum (black pepper) plant, which is grown in many very warm, humid parts of the world Like most other plant-based spices and seasonings, the flavors and aromas of a peppercorn are carried in its oils. Those oils are very delicate and begin losing some of their subtleties within minutes of being exposed to the air. The PEUGEOT pepper mechanism is designed to get the most out of your pepper by first cracking the peppercorn, then grinding it to the desired size.

The design is often imitated but has not been duplicated. The mechanism has a helix-shaped double row of teeth that guides the peppercorns and holds them to be cracked before being ground to the desired size. This two-stage grinding process releases more of the pepper’s oils, maximizing all the flavors and aromas of the variety of peppercorns being ground. |

The steel mechanism is case hardened to ensure sharpness and resiliency. It has also received a patented treatment that protects it from corrosion and further enhances its resistance to wear |

It is easily recognized on the mill because the all-steel mechanism hangs below it’s mounting point on the underside of the mill body |

Suitable for use in the PEUGEOT pepper mills:
Hard, dry peppercorns from the piper nigrum family:

White (e.g. Muntok white) |

Black (e.g. Lampong, Tellicherry, Malabar) |

Green – as long as they’re dry and hard |
Suitable only in pepper blends that contain mostly the hard, dry peppercorns listed above

Green (softer, moister) or pink peppercorns, as they are soft and will clog the mechanism if harder, drier ones are not present to help the mill self-clean |
Not recommended for use in PEUGEOT pepper mills

Other “peppers”, such as Balinese long peppers, as they are very long, dense and mostly too thick to be trapped in the grooves and drawn through the grinder |
Never suitable for use in PEUGEOT pepper mills

Brined or pickled peppercorns, as they are much too soft, will easily clog the mechanism, may cause the steel to corrode |
