The PEUGEOT chili grinding mechanism is made of case hardened steel that has received a special treatment to provide further protection from wear and corrosion. It is designed to split and rend dried chili pods, releasing more of their essential oils to produce the greatest amount of flavor and aroma |

The mechanism is easily recognized by three features:
| a) |
the all steel mechanism and retaining bar protrudes below its mounting point on the mill body; |
| b) |
the clear acrylic divider in the reservoir, which keeps the very light chilis in separate chambers |
| c) |
the pre-chopping blades that help to guide the dried chilis into the grinding mechanism |

Suitable for PEUGEOT spice mills

Very dry dried chilis, such as African Devil (birdseye) or Habanera |

Note: some chilis are quite large, even in dried form. It may be necessary to cut the dried chilis before they are placed in the reservoir (e.g. Muntok white) |
Never suitable for use in PEUGEOT spice mills

Other “peppers”, such as Balinese long peppers, as they are very long and dense.

They are mostly too thick to be easily drawn through the grinder |

They are so hard and dense that they are highly likely to break the inner acrylic divider |

fresh or moist chilis - they will clog the mechanism over time |

crushed chilis, as they are too thin to be trapped by the mill, especially on the coarser grind settings |
