Temperature
To get the most from a wine, it should be served at a temperature that is appropriate to the varietal (type). The adage that red wine should be served at “room temperature” no longer applies, as that rule was created before the days of central heating, when room temperature was in the mid-50’s to low 60’s.

Preservation
